In the world of French cuisine, Chef Michel is an institution, having worked as a leading chef at some of the finest restaurants all over the world. His résumé brought him fame and acclaim in the “Lifestyles of the Rich and Famous Cookbook” as Executive Chef at the Beverly Hills Hotel, but in the end it was right here in Glen Ellyn that he wanted to finish his career with his very own Bistro, named after the sensitive and colorful impressionist painter, Claude Monet. It was that very spirit of Monet that Chef Michel wished to impart in his cuisine: impressionism in the design of traditional French bistro fare, introducing to DuPage County the subtlety of sauces, infusions, and preparation that he learned in Biarritz over fifty years ago. But as in all things in life, there comes a time when even a tireless man must retire. Operating Bistro Monet over the past ten years, six days a week, would be an arduous undertaking for a man half his age, but Chef Michel worked all this time for one reason: he loved the process of preparing elegant dishes for his guests. Of course, as Chef Michel’s regular customers knew, they were really more than guests; they became in one sense his partners in the endeavor, knowledgeable people who enjoyed not only the delightful food but the quiet, mature atmosphere and the friendliness and expertise of his staff. Rare if not unique, Bistro Monet was an oasis of dignity in a world today where too many restaurants compete loudly and brassily for customers. There would be none of that for Chef Michel. Truly his customers learned of him through word of mouth. Eager to explore the next chapter of his life, Chef Michel has decided to close his beloved Bistro. After 56 years of cooking, Chef Michel is looking forward to traveling and enjoy a more leisurely pace. On the behalf of his able and professional staff, Chef Michel sincerely thanks all his friends, acquaintances, and customers over the years and is glad that they and he were able to meet and enjoy each other’s company while they could. Au revoir!
